I attended a business meeting at the Omni so we had dinner here one evening also room service for lunch one day. It was pretty meh all around. We were one of 3 tables in the vast, empty dining room on a Thursday night so service was certainly attentive. We had the misfortune of a waiter who was on his first day at the job. It’s understandable that someone wouldn’t have the beer list memorized on day one but it doesn’t change the fact that one is left to sip the Stella Artois one settled for and wonder what might have been. We were given some sort of ceviche tortilla strip amuse-bouche, which was nice, followed by bread and salad. The ceviche dish was probably the highlight of the entire meal as it was the only thing we ate with some semblance of creativity or resemblance to local cuisine. The bread was fine but boring. My caesar salad was served as a leaf salad. I suppose some people enjoy salads that way but those people are incorrect. I think state law should require warnings for this sort of thing. For our mains, two of us had salmon and one had lamb chops. We got some sides to share: mashed potatoes, spinach, and mushrooms. The salmon was a bit overcooked on both dishes, It was a pale pink shade throughout rather than the sort of darker, moist middle that is the universally accepted way of cooking a salmon. The salmon came with mushrooms that were basically the same as those we ordered as a side. Along with about a table spoon of roughly chopped green beans. At $ 30, the salmon should have been either larger or much more interesting(or at least properly cooked) to justify it’s price but I suppose they have a captive audience, here. The man with the lamb chops reported a similarly middle-of-the-road opinion, lest you think that spending an additional $ 5 would get you a better meal. The sides were ok. I skipped the mashed potatoes as they looked fairly boring. The mushrooms were ok and the spinach was probably the highlight. It came in a sort of cream sauce. We got carrot cake for dessert which is not made in house. I thought it was a bit dry/firm and pretty uninteresting. The three of us were splitting the«slice for two» but I don’t think we finished it, owing to lack of interest. Hill Country Dining Room is a restaurant that sells boring food, prepared adequately, for too much money. There are no flavors you haven’t seen combined before(and with better execution) somewhere else. And, despite the«Hill Country» in the name, nothing about the menu is a reflection of local cuisine. Truly the only reason to eat here is if you’re stuck at the hotel(and it is a nice hotel so I guess worse things have happened).
