Was at this restaurant on their soft opening day– yesterday Jan 21st, 2016. They are now in an actual building. I’m guessing they will continue to operate the food truck as well. It’s located in a former Mexican restaurant called Blue Coyote (pretty sure that was the name). They were very busy with locals, fans, and friends on their first day open. Food was pretty good and price was fair. I’m only worried that the location isn’t the best. It’s easy on and off the freeway, but that’s the only good thing about this spot. Very poorly lit exterior at night and even locals might not know it’s there for months or years. Word of mouth will need to work.

They were at an event tonight for a release party and had amazing service and had amazing food! Had their salad with chicken, to die for! Also, tried the cod burrito switch was also extremely tasty! Would love to have their food again!

Corey and his crew catered a party for us today. Everyone loved the food (we had an assortment of tacos and vegetarian burritos) and the endless salsa bar. Not only was the food great, but their service was outstanding. They arrived exactly when scheduled, served food on time and had a friendly and helpful attitude. We look forward to having them serve again at our next party. Highly recommended!

We drove out yesterday, found the parked, closed food truck, :(
I decided to call and left a message for Cory (sp). I have not tried the food yet, but he did call back and appreciated the suggestion I had of updating the site so others don’t think he serves food on Eckard. He will be at Knee Deep on Friday and Saturday on August 8 & 9th, 2014.
I plan to be there. Hope this helps others avoid the confusion. He posts on Facebook and does answer messages left on his phone.

Directions take you to a closed truck parked in a residential driveway. Big waste of time. i have never given a 1 star without tasting the food but we were so frustrated to drive so far off the freeway and find nothing. we knew it was a food truck but many food trucks have set locations. I suggest not listing an address if it is not valid for dining.

The foods has been excellent every time I’ve eaten here. Fish tacos and burrito are so good! He’s at different breweries each night, the owner is super nice and his taco truck is very clean. I totally will recommend to all of my friends. Thank you for the yummy food!

Beautifully executed fusion food! Easily the best street tacos I have had in a long time. Every ingredient screams FRESH, and very consistent (I’ve had the pleasure of eating this wonderful food multiple times at Knee Deep Brewery in Auburn). This is a food truck that goes beyond quick and easy – more like an experience that always leaves a smile on the face and a happy belly. Highly recommend!!!

Great new food truck in town! Amazing food, all fresh ingredients. Their fish tacos are by far the best I’ve eaten. Also had the salad with a very tasty dressing that has folks coming back day after day.

Yum! New local food truck. Their Facebook is a good place to check for hours and location. Fish tacos are amazing! The owner and his staff are all very friendly. I can’t wait to eat here again :)
