Hands down the best degustation I’ve had in Sydney for a while. But first, let me be clear how surprised and happy I am that a restaurant has taken the initiative to get rid of bottled water. They now have filtered water and sparkling made with a carbonator in house, the result, constant top ups without the $ 90 bill at the end. So refreshing. Now the food, was delicious. The 8 courses was primarily seafood and top quality, then the duck and wagyu beef. Dessert was always going to be a hit with The passionfruit soufflé, but the banana sorbet for me was overpowering and I would have preferred something sweeter, but perhaps that just my sweet tooth. Overall an excellent long lunch and I would be back as soon as I have the time. Try it, do the 8 courses and enjoy.

Took my partner here for his birthday. In fine dining establishments, as odd as it sound, our first impression of service is judged by what we call the«lemon test». My partner has lemon with his water. If its brought to the table with the bottle, then it’s an A. If we have to ask, then a B. If we have to ask twice, its a C, more than twice a D, and if it never comes, an F. Guillaume got a D. We had to ask three one person twice, and finally a third before it was brought. Speaking of water, the sparking, was flat, and seldom refilled. The service besides that was excellent. We started with a bottle of champagne, and had the Sommelier help us with a bottle of red. o We had the four course($ 145.00 each). Highlights were the mains. Toothfish, and Wagyu. We added the supplement of a cheese plate. It was the first time I had Holy Goats, and now I’m addicted! Yum!!! All in all, it was a lovely dinner. With dinner, and the booze, we hit the $ 800 mark. So this place is not for those on a budget. The intimate dining room, food, and service, makes for a lovely night out. If they’d passed the lemon test, they would have earned 5 stars.

After a very long wait, Guillaume is back with a vengeance! Thank goodness, because I was starting to lose faith in the word ‘soon’. The new location is much more intimate with an almost homey feel(but much fancier, unless your house is the Versailles palace). And he’s got his old crew running the place so the service was seamless. The food was fantastic, even better than what I remembered. The only issue we had was that our booking was a tad short which meant we couldn’t stay for coffee and madeleines, which was disappointing after 8 months wait. To be fair, we were told at the time of booking when we’ve got the table till, but I lost track of the time as I was busy licking my plates clean. Guillaume, if you are reading this, mark my words… I’ll be back!
