Yep it’s pretty meaty. I have family in the meat and butchering industry so I prefer to purchase meat at a proper butcher rather than the supermarket. I come here especially for grass fed Angus and their lamb is pretty good too. Sausages… I like to know the sodium and sugar content. I could ask… and maybe next time I will. All the sausages I have had from here have been mighty tasty especially the cumberland. I tend not to buy meat that has been marinated by someone else as I like to know exactly what I’m eating. I’m a ‘from scratch’ cook mostly. Meat @ Billy’s is a great place to come when you want some advice from a butcher who knows about cuts and how to best cook them. They do have an wide range of marinades, sauces and condiments and are full of advice about what goes with what. Oh yeah and their chicken livers are fabulous! Great customer service: they are chatty, cheerful and informative. They often remember what you bought last time and ask how you liked it. You defs don’t get that at the supermarket.

Taking a while to decide what I wanted to buy I hear«Hey lady, stop looking at my meat, my eyes are up here!». No that didn’t really happen. This is what really went on… I stared longingly into the butcher’s eyes and asked for some ham, even though Christmas had long been over. «Do you want that with the bone in?»(That’s what he said.) I turned to my husband, he didn’t know what to say and wondered why I was looking to him. «Yes…» I timidly replied, «and I need enough for 12 people». It was going to be a big dinner party, we were all hungry. «Do you want leftovers?» he replied. This time I didn’t have to decide for myself, my husband answered with a firm and definitive«Yes» from behind me. Later that night and again the next day Billy’s ham was enjoyed by all(except the vegetarians who dropped by). He never got to hear everyone exclaim how wonderful the experience was or bask in their praises but wherever you are Billy, please know that I will be back again for more. If you aren’t much of a meat eater, Meat at Billy’s may change that. ;)

Vegetarians look away now. Okay, let’s kick this review off. Meat @ Billy’s has a reputation of being one of Brisbane’s best butchers and they’re not exaggerating. If I want quality cuts of meat, Billy’s is where I make a beeline for. Last week was no exception when I wanted to buy a few of the Italian Sausages that I’d discovered were what Merriweather Café use in their breakfast baguette. Unfortunately, they were sold out when I arrived but that didn’t stop me leaving with bacon, Canadian Maple pork sausages and a leg of pork to slow roast. There’s plenty of condiments to consider as well and you’ll rarely leave empty handed. The lads behind the counter are friendly, helpful and, using a fan dangled pulley-system contraption, will even open the door for you as you leave. And yes, it is slightly more pricey than what you might buy in the supermarket but I feel it is worth it for the higher quality of produce. It isn’t often I crave meats of any kind but if I do, I want it to be good.

Great butcher, the staff are super friendly and the products are delicious! The chicken mince rissoles are amazing. They also have a full shelf of sauces, seasonings & extras, some of which are extremely hard to find anywhere else(only the second place in Brisbane I’ve been able to track down pimientos). Highly recommended!

Despite not being a huge meat eater, I always love visiting the butcher. And by the butcher, I don’t actually mean admiring the animal carcasses strewn around the shop(though some do look quite impressive — especially their Christmas hams!), but the actual butchers who work there. Meat @ Billy’s have some of the friendliest butchers around, and always seem to be filled with interesting tips regarding cooking and carving techniques. As it is a place mostly visited by locals, it is easy to notice the camaraderie between the customers and the butchers. Being a newbie myself, the butcher was intrigued as to my decision to purchase a shoulder of lamb. I told him I was doing a Moroccan style slow cooked stew, and I literally saw his eyes light up as he told me the ideal cooking time and hurriedly began wrapping the meat for me. I almost felt obliged to invite him for dinner. Oh, and butchers aside; there is a huge variety of meats, and as I mentioned before — specialty Christmas goodies!

Meat @ Billy’s is acknowledged as one of Brisbane’s best butchers. They have a great range of meat, but what sets them apart is their staff. They know where the meat came from(which is important to environmentalists and animal lovers like me) and they can take you through the different cuts and best cooking methods for each. Like all awesome butchers they also have dog bones for sale, and are not above slipping a little extra in the package for a particularly personable puppy. You will pay a little more than at the supermarket, but the taste difference is astronomical and well worth the expense.
